Role Overview:
A phenomenal opportunity for an exceptional individual. After eight years under the previous Head Chef where the department has gone from strength to strength, we are now looking for an ambitious and high-performing chef to come in and take it to the next stage. This is a genuinely rare chance to lead the busiest, biggest and most prestigious food operation in Dundee and Tayside, we are looking for an established Head Chef ready to come in and support our Grill and Banqueting chefs in our busy outlets.
We are looking for a modern, progressive chef ready to fit in with our high-performing but fun culture, where we strive to be industry leading in our delivery of our food offering across all areas. We are looking for that exceptional person who can ensure that breakfast is delivered consistently to all our guests at high quality, who can ensure that our restaurant offering is current, priced accordingly, appealing and delivered to the highest quality level, and who is also comfortable at managing and delivering events up to 800 people.
As Head Chef your role will be to deliver all this, through phenomenal, positive management of our team of chefs and kitchen porters, supporting them positively through day to day delivery, and ensuring there is a culture of development and progression personally, through your guidance. You will work closely with our internal support services, supply chain, and all other stakeholders to deliver across all key deliverables. In keeping with the senior role, these include commercial acumen to support delivery of commercial budgets, financial awareness and ability around food cost and appropriate forecasting, strong knowledge of food safety and ability to embed this in the culture, and delivery with the team, creating an engaged and passionate team who will support you in delivering exceptional guest feedback.
Lastly, you will be part of a high performing hotel leadership team, where you will play your part in supporting delivery of hotel wide initiatives designed to improve staff engagement, guest delivery, and our part in the wider Dundee community.
Main Responsibilities:
Leading a phenomenal team across the kitchen, supporting the Grill and Banqueting chefs in delivering exceptional food and service across all outlets
Training, development and inspirational leadership for all in the kitchen, creating a culture of excellence and improvement, and creating pathways for chefs of the future to progress through your kitchen
Fully accountable for management of all kitchen areas, ensuring the are operating within company standards and fully compliant with all Food safety and H&S legislation.
Responsible for ensuring consistent food quality across all areas, working with all teams to ensure this is a continual focus, and delivers the quality in keeping with our reputation and in all areas of the business
Full profit control responsibility, ensuring menus are appropriately costed, food waste is controlled assertively, and all measures are taken to maximise profit delivery
Working with the F&B Manager and other key stakeholders to continually improve our offering, and take advantage of all revenue opportunities, with our commercial performance always at the forefront of your mind
Coaching, training and supporting all Chefs and apprentices to provide consistently high standards, while continually looking to improve. You'll have the talent to build, develop and motivate a team to deliver excellent levels of customer care.
Prepare and respond to all audits completed by the company appropriately
Controlling the Kitchen budget, in relation to occupancy, departmental expenses and team rota's.
About you:
You will be a Head Chef at the very top of your game we have no quiet time, and we set ourselves high standards, and looking for a Head Chef to do the same, and someone who will lead and inspire all around them, creating a high performing team but also being an integral part of our leadership team. You will have immense pride in positively bringing the most out in all your team, creating a culture of excellence, and using your passion for food to create that culture in that team. You will have an in-depth knowledge of food safety as well as cost control and leveraging your commercial skills to grow revenue in all areas in concert with key stakeholders.
This is a vital role in the function of the hotel and ultimately one that guests will remember the most. You will be great at multi-tasking, you will be efficient at solving all guest enquiries and requests with ease, with a positive attitude to all requests

Ensure our guests experience and the food is presented to a high spec
You'll be passionate about nurturing and developing your team through development programs and mentoring
Great organiser and who can prioritise your workload
Previous experience at Head Chef level is essential, or Senior Sous Chef at larger, more prestigious properties.
You will have previous managerial experience within a similar role.
Experience of working in a 4 or 5 star hotel or similar is essential
