THE ROLE We are looking for an Assistant Bars Manager to join our team. As a pivotal member of our front-of-house service team, you will be responsible for the curation and execution of a world class drinks offer, ensuring highly trained, charismatic team work together to deliver excellence to our members and create drinks which are immaculately and imaginatively executed. You are responsible for setting the service standard of the bars, so we seek somebody with extensive experience in high-end drinks service environments, an impeccable demeanor, excellent customer service skills, and logistical and organisational acumen. You should also have a great network of suppliers and a creative flair which you will have the opportunity to put into practice both behind the bar and at our multiple member and private events. Your main responsibilities will include: Operations & Service Assist manage the bar operations across The Roof Gardens (TRG) ensuring bar team in place to provide service excellence to members and guest. Maintain a large inventory, ensuring bars are well-stocked and efficiently run both for the day-to-day operations and for special or large-scale events. Support the Bars Manager creating all beverage and cocktail lists (other than wine), ensuring correct pricing to achieve budgeted GP and ensuring your creative, beautiful and delicious cocktails set the benchmark for clubs in London. Build a team of motivated, positive, and impressive bartenders and barbacks, who are immaculately presented and highly trained to deliver first class service. Build team knowledge on spirits, cocktails, wine and food through effective collaboration with the Bar team, Sommeliers and BOH team. Ensure effective communication between BOH and FOH to ensure service runs smoothly through opening hours. Ensure effective and engaging daily briefings before each service. Build Member loyalty and ensuring that the Bar team are constantly building their knowledge on the Members to provide individual and engaging service at all times. Study sales reports to understand member habits and preferences, enabling you to tailor the drinks offer across the business. Ensure a thorough knowledge of Members' and Events' programmes at TRG. Ensure a thorough understanding of the market within which TRG operates, including regularly assessing the competition and ensuring existing and new brand relationships are working and developed as per any agreements in place. Ensure the tone of all beverage offerings throughout the Club bar and events is consistent with the values of TRG. Responsible for ensuring all opening and closing duties are completed correctly and to the standard set out. People/Team Recruit talent to the bars of TRG in line with Company policy and procedures and ensure all team members are inducted into the team with a good understanding of their role and of the Company Values. Lead, inspire and motivate the Bar team to achieve stability, increased productivity and employee loyalty and engagement. Communicate clearly with the Bar Team to ensure they are aware of what is required of them at all times, setting them measurable objectives and managing their performance. Work with the Bars Manager and senior management team to deliver exceptional standards of service within Food and Beverage Operations based on TRG's values. Work collaboratively with Deputy F&B Manag and senior management team to deliver the objectives of the Food and Beverage department. Financial & Inventory Management Work with the Bars Manager to maximise beverage revenue by maximising average spend, gross profit and minimising cost and eliminate any discrepancies in stock. Work to ensure that beverage margins are maintained in line with targets, that wastage is strictly controlled and the price integrity of the drinks menu is maintained. Initiate and maintain vendor relationships. Manage and maintain stock and bar systems including stock control software, training key members of the team where required to ensure accurate usage and reporting. Uses point-of-sale (POS) tracking technology and bar and restaurant management platforms. Maintenance & Compliance Maintain records (fridge temps, drink recipes, costings etc) as needed. Ensure that the Bar(s) are clean, well maintained and provide the best possible environment for Club members and guests. Complete opening and closing duties to ensure compliance and quality assurance of standards are maintained. Ensure a high level of personal hygiene, grooming and uniform standards of the team. Ensure all team members adhere to health & safety, food hygiene, COSHH and fire regulations and any other Company policy and procedure. Ensure full adherence to the licence operating requirements which always require compliance. The skills and experience which will help you succeed in this role Proven experience in a similar role in a fast-paced, multi-outlet business within the luxury lifestyle market, private membership clubs/hospitality businesses or similar Accomplished mixology skills and true passion for your craft with an extensive knowledge of quality spirits and a passion to continually develop the drinks offering Strong understanding and knowledge of effective liquor, stock and margin control within a bar environment A hands-on, proactive and enthusiastic leader with excellent team-building skills.
