The Peninsula London is seeking to hire a talented Restaurant Director for our Brooklands Operations, encompassing, Brooklands** Restaurant, Brooklands Bar and the Tasting Room. The Restaurant Director will demonstrate an exceptional experience in overseeing our operations, ensuring the provision of quality food and beverage service as an industry leader, and maximizing turnover while maintaining the highest possible departmental revenue and profit margin.
Brooklands** restaurant offers contemporary European cuisine from Michelin-starred Chef Director, Claude Bosi, widely considered to be one of Britain's leading culinary lights
as well as top-flight libations and cigars
in a collection of distinctive spaces inspired by the classic eras of British aviation and motorsport.
The venue, designed by London architects Archer Humphryes, comprises a sleek main dining room with a sweeping outdoor terrace with enchanting panoramic views across Londons skyline taking in iconic landmarks like St Pauls and the City, the London Eye, and Battersea as well as over three Royal Parks (Hyde Park, Green Park, and St James Park).

Key accountabilities Exceeds guest expectations with service, in keeping with the Peninsula Service Principles, focusing on the core principles. Looks for improvement for better service standards with a general theme of anticipating the guests' needs. Ensuring productively levels are concurrently met in the Restaurant, Bar and Tasting Roomand understands the need to prudently manage utility/ payroll costs within stipulated budgetary requirements. Ensure the monthly and annual revenue targets are met and analyses all operational data to manage business periods, client needs and forecast future business. Manages the day to day operations ensuring the highest levels of guest satisfaction. Ensures successful and profitable leadership of the outlet. Suggest and develop sales strategy, promotions, activities, and budget to support the hotel in preparing the annual F&B marketing plan and budget. Hires, develops, motivates, supervises, and performance manages department colleagues in maintaining a culture in compliance with mission, vision, values and cores principles HSH.
General requirements Minimum 3-year experience in a similar role within a Luxury Hotel environment with similar standards and expectations. Is a natural organiser, highly detailed and able to engage with guests. Strong people leader having prior experience managing a team. Excellent time management, communication and organisational skills, highly adaptable, naturally positive. Fluent English communication proficiency. Expertise in a second language would be desirable.
