As our Pastry Sous Chef, you will work as part of our large culinary team. You will deliver exceptional service to our Members and Guests. Provide culinary excellence, ensuring that we are meeting expectations and consistently WOWING our Members. Development of pastry menu with the Head Chef. Using fresh produce with a seasonal changing menu and an emphasis on local produce. Key Areas of Activity Producing all desserts, cakes, puddings, and pastries to a high standard for functions, afternoon tea, celebrations, meetings, and the dessert menu. Organise section to ensure that all outlets receive equal care and attention and that service to all areas run at the same time. Responsible for the making of displays and special requests i.e. celebration cakes. Responsible for ensuring the pastry section has a cleaning rota i.e. fridges, ovens, microwaves, shelves, sinks, table tops, etc, and is carried out on a regular basis. Being fully knowledgeable about all food outlet menus, in particular items which are the responsibility of your section and of their recipes and quantities. Ensuring correct stock control procedures are adhered to, including the appropriate storage, rotation, and retention of stock and that any irregularities are notified to the Head Chef. o work collaboratively with Head Chef for the smooth running of the overall kitchen function. Carrying out on-the-job training for staff within your section, completing the relevant training records. Ensuring the effective use of utilities (gas, electricity, and water) and equipment within the Kitchen, reporting any maintenance issues at the earliest opportunity. Working in close liaison with all sections of the kitchen to ensure efficient service and maintain a high level of communication with colleagues and other staff. Adhering to all statutory requirements regarding, fire, health and safety, and hygiene.
