Position Summary: As the Executive Head Chef at St Pancras, you will be primarily responsible for managing all kitchen operations ensuring that food is produced and served to the highest quality. As a department head, directs and works with the food and beverage management team and associates to successfully execute all kitchen operations; drives the continual improvement of guest and team member satisfaction while maximizing the financial performance in all areas of responsibility. Ensures a consistent, high-quality product is produced whilst guiding and developing every member of the brigade. Safeguard sanitation and food standards whilst managing a busy operation. Areas of responsibility comprise overseeing all food preparation areas (banquets, room service, Mi +ME, Hansom, The Booking Office 1869, St. Pancras Terrace, Chambers Club and employee cafeteria) and all support areas (Stewarding and purchasing). Responsibilities: Here's what your journey with us entails Work with Director of Food & Beverage on seasonal menu changes Ensure that your own knowledge of food, beverage, design, people and local area is simply a must with an understanding of the overall hotel operation being essential for this role to understand the part you play in the wider guest experience Develop and maintain a system of quality control to ensure that all food served is of the highest standard. Promote creativity and innovation within your managers and supervisors and the wider team, holding regular product development meetings. The holding of Monthly departmental meetings and 1:1's is essential. You must be fluent in the Hotels BSA process and have a great knowledge of the various components of this audit Product (food), menu, operational, food hygiene knowledge is essential, and you are responsible for ensuring your team members also have this knowledge. Our guests must receive a consistent level of food quality the first, second and fifth time they visit any of our F&B outlets - you are responsible for ensuring the consistency through training, coaching and regularly meeting with your team L3 Food Hygiene is essential this role. You should work towards achieving your NCPLH if you do not hold a certification already Leading the Monthly departmental meetings and 1:1's is essential for you to share the knowledge that the wider F&B team need to know Monitor food quality while preparing food and throughout the day utilizing the HACCP forms and production charts. Attitude, grooming standard, body language and tone need to be positive, supportive and on brand at all times Ensure that all Health and Safety measures are in place for your departments and that the business is compliant Conduct and attend daily/weekly business/strategy/management meetings, management meetings and other meetings as required/requested Prepare all potentially hazardous foods at the correct temperature according to the HACCP guidelines. Follow appropriate personal hygiene procedures to ensure food served to guests is safe for consumption, including disinfecting hands prior to handling food and wearing a hat/hairnet and proper footwear. Follow and ensure compliance with food safety and handling policies and procedures, such as product rotation, First In-First Out (FIFO); dating, labeling, cleaning, and organizing coolers/freezers/storage areas; and Cold Chain compliance, across all food-related departments and areas. Maintain up-to-date knowledge of company Food Safety Programs within assigned area of responsibility, as well as all local, state, and federal regulations. Follow Hazardous Material Management Program procedures for handling and disposing of chemicals, fertilizer, pesticides, blood borne pathogens, etc., including using Material Safety Data Sheets (MSDS). Organize cleaning chemicals and supplies and ensure they are stored appropriately and kept separate from food products. Follow and ensure compliance with sanitation and cleaning procedures and pest control guidelines, reporting pest control issues to appropriate personnel. Qualifications: Mandatory Level 3 in Food Hygiene Previous experience at Head Chef/ Executive Chef level as a minimum requirement (minimum of 5 years) Experience in high volume multi-outlet functions Exceptional interpersonal and communication skills with the ability to interact effectively at all levels. Proven leadership abilities with a track record of successfully leading and motivating teams.
