Bar Manager – Casa do Frango London Bridge

Casa do Frango London Bridge is a 200+ cover dining space set across two floors, welcoming 3000+ guests each week. The site also contains a charming private dining room and the Green Room – a 45-cover speakeasy bar. It’s our flagship site that opened in 2018 to rave reviews from the likes of Jay Rayner and Marina O’Loughlin.

As a Bar Manager, you will be an acting Head of Department, reporting directly to the GM and responsible for all beverage operations in the restaurant

Key Responsibilities:

1. Guest Experience

• Lead the team to deliver a best in class drinks programme to all guests
• Oversee all bar operations across 2 dispense bars and 1 cocktail bar (Green Room)

2. Product

• Ensure all drinks and bar offerings are delivered consistently, to the required standard
• Assist GM and Ops in developing new cocktails

3. People

• Recruit and manage the bar team
• Beverage related training and inductions
• Lead pre-service briefings, trainings & tastings for the team

4. Systems & Processes

• Prep & pre-batching management
• Beverage stock orders and stock counts
• Ownership of beverage GP’s
• Ownership of all recipes, documents and other SOP’s relating to the beverage programme and operations
