JOB TITLE: Head Chef REPORTS TO: Club Manager IMMEDIATE LINE MANAGER TO: Sous Chef, Head Buttery Chef & Kitchen Team EMPLOYED BY: Royal Mid-Surrey Golf Club Royal Mid-Surrey GC is a very busy private Members golf club with a small but very busy buttery kitchen downstairs providing freshly cooked comfort food such as sandwiches, burgers, pizzas, hearty breakfasts and salads. We also cater for a wide variety of functions from the upstairs kitchen such as member lunches, weddings, funerals, conferences, private dinners and parties. Objective Responsible for managing the two kitchens, quality control of dishes and maintaining a spotless working environment in accordance with health & safety laws. You will have the ability to create menus and specials in collaboration with the management team, understand and calculate GPs, organise ordering and stock control, and ensuring the day-to-day cleaning is kept to a high standard. Duties Oversee the day-to-day running of the kitchen, stocks, GP, labour costs, HACCP and COSHH Plan creative, seasonal menus that make use of fresh, local ingredients and conduct menu costing. Strong leadership skills with the ability to train, motivate and inspire a team. Ensure that kitchen staff adhere to quality, hygiene and cleanliness standards. Dealing with suppliers and ensuring they supply quality goods at affordable prices. Ability to work within a budget, making sure all costs are being controlled. Oversee the maintenance of kitchen equipment and organising repairs when needed. Enforce policies and procedures and safe handling practices. Respond to member/guest requests and food restrictions in an attentive and accommodating manner. Maintain high member/guest satisfaction levels through culinary leadership, ensuring high quality of food and service at all times. Engage with your team and the rest of the management team to achieve RMS targets and striving for the best stock results Work closely with the Operations Manager and the front of house team to ensure our members and guests have a great experience. Qualifications: You'll need to be a talented Head Chef or Senior Sous looking for their next challenge, with passion for fresh food, an eye for detail, a strong work ethic and a love of kitchen camaraderie. Experience and Knowledge required: A proven track record, with good references to support your CV Good communication skills Management of a kitchen team, to train and inspire Ability to work under pressure Ability to cost a menu and work within a budget Candidates must be eligible to work full-time in the UK Key Competencies: The post holder must demonstrate the following: Self-motivated Hard working Excellent interpersonal skills Attention to detail Good team player Miscellaneous: The post is based at Royal Mid-Surrey Golf Club A salary reflecting the post holders experience and position within the organisation will be offered.
