Senior Sous Chef

Location: Cleveland Clinic London Rate of pay: £52,000 per annum Working pattern: 5 days over 7 Key responsibilities • Assist in the development and planning of menus that are in line with client and patient expectations. • Ensure that all food is prepared to the highest standard and in line with the specifications in place. • Ensure food is seasonal, of known provenance and where possible sourced locally. • Ensure food is produced in a timely fashion to ensure smooth service to the customers & patients. • To ensure that all appropriate ingredients are available for the menus being prepared and where necessary identify shortages and report to Head Chef. • To communicate with the relevant parties all requirements for planned menus and order necessary ingredients. • To undertake stock ordering and stocktaking as necessary and inform the Head Chef of supplier quality issues. • Train all junior staff on dish specifications. • Ensure recipe specifications are used for all menu items.
